Rice Dressing


This Dressing Is Good With Fried Chicken And All Kinds Of Meats...And Great For Stuffing Your Favorite Game..Sandra Happy Eating ...

1 lb lean ground beef

1/2 lb Chop Chicken livers                                                                                                                                                               
1⁄2 cup finely diced bell pepper

1⁄3 cup diced green onion

1⁄2 teaspoon garlic powder

1⁄2 teaspoon dried celery flakes

1 teaspoon creole seasoning

1⁄4 teaspoon ground red pepper

4 cups long grain rice, cooked and drained

1⁄4-1⁄3 cup water

1⁄4 teaspoon black pepper

DIRECTIONS
In fry pan, stir in ground beef and chop chicken liver bell pepper.
Cook over medium high heat until beef loses its pink color and bell pepper is soft.
Remove excess grease.
Turn temperature down to medium or medium low.
Add remaining ingredients; stir and cook together until ground beef is completely cooked and liquid is gone.

Classic Standing Beef Rib Roast




A standing rib roast WOW!!! That what you will get is a very special treat and  traditional Feast Days..

1 (7 pound) standing Beef rib roast

1/8 teaspoon salt

1 pinch ground black pepper

6 tablespoons red wine

2 cups Swanson® Beef Stock or Swanson® Unsalted Beef Stock

1/4 cup all-purpose flour

Seasoning of your choice

Heat the oven to 325 degrees F. Season the beef with the black pepper. Place the beef into a roasting pan, rib-side down.
Roast for 2 hours 20 minutes for medium-rare or until desired doneness. Remove the beef to a cutting board and let stand for 20 minutes.
Spoon off any fat from the pan drippings. Stir the wine in the pan and heat over medium-high heat to a boil, stirring to scrape up any browned bits from the bottom of the pan. Reduce the heat to medium and cook for 5 minutes. Pour the wine mixture through a fine mesh sieve into a 2-quart saucepan.
Stir the stock and flour in a medium bowl with a whisk. Gradually add the stock mixture to the saucepan, stirring with a whisk. Cook and stir over medium heat for 5 minutes or until the mixture boils and thickens. Season with additional salt and black pepper, if desired. Serve the stock mixture with the beef.

I found Another great Chocolate Cake Recipe From Southern Living ...This cake is made with Buttermilk, Chocolate, Semisweet Chocolate, and Chocolate syrup.  Ohhhh!!! how chocolate it is.

Ingredients

10 inch Bundt pan

Preheat oven at 300º

Ingredients:

1 cup margarine or butter

1 ½ cups sugar

4 eggs

½ tsp. baking soda

1 cup buttermilk

2 ½ cups all-purpose flour

1 ½ cups semisweet chocolate mini-morsels, divided

2 ( 4oz ) bars sweet baking chocolate, melted and cooled

1/3 cup chocolate syrup

2 tsp. vanilla extract

4oz white chocolate chopped

2 Tbs. Plus 2 tsp. Crisco (shortening, divided

chocolate and white chocolate leaves ( Optional )

How to make it

1 Cream margarine in a large mixing bowl; gradually add sugar, beating well at medium speed of an electric mixer. Add eggs, one at a time, beating after each addition.
2 Dissolve soda in buttermilk, stirring well. Add to creamed mixture alternately with flour, beginning and ending with flour. Add 1 cup mini-morsels, melted chocolate, chocolate syrup, and vanilla, stirring just until blended. (Do not overbeat. )
3 Spoon batter into a heavily greased and floured 10 inch Bundt pan. Bake at 300º for 1 hour and 25 to 35 minutes or until cake springs back when touched. Invert cake immediately onto a serving plate,and let cool completely.
Combine 4oz chopped white chocolate and 2 Tbs. Shortening in top of a double boiler; bring water to a boil. Reduce heat to low; cook until mixture is melted and smooth. Remove from heart. Drizzle melted white chocolate mixture over cooled cake. Melt remaining ½ cup mini-morsels and 2 tsp. Shortening in a small sauce pan over low heat, stirring until smooth. Remove from heat, and let cool; drizzle over white chocolate.

Citrus and Poppy Seed Pudding

Ingredients

2 small oranges

1 lemon

2 eggs

2 cups self raising flour

½ cup sugar

125 g ricotta

2 tablespoons poppy seed

For the syrup:

1 orange, zested and juiced

1 lemon, zested and juiced

100 g butter

¼ cup icing sugar

To serve:

125 g ricotta

Icing sugar, to dust
orange segments

Instructions
Preheat oven to 180˚C.
Place oranges and lemon into a small saucepan and cover with water. Bring to the boil, then simmer, covered for 10 minutes. Cool slightly.
Place the oranges and lemon into the bowl of a food processor with the eggs and process until smooth.
Add the flour, caster sugar, and poppy seed and ricotta into the food processor and process until well combined.
Spoon the mixture into 8 x 1 cup muffin pans or pudding moulds.
Cover with greased foil. Place on a baking tray and bake for 12-15 minutes until cooked when tested.
For the syrup:
Melt together the butter and icing sugar. Stir in the orange and lemon juice and zest; bring to the boil while stirring.

To serve:
Unmold the pudding onto individual serving plates. Drizzle with syrup. Serve with a dollop of ricotta, dust with icing sugar and garnish with an orange segment

Red Beans And Rice


I love Beans of all kinds and I will cook them up in a tinkle of an eye. One thing you much know you got to cook beans in smoke meat so they can get that flavor.

It don't have to be pork you can cook them in smoke turkey tails,"yes sir"

I like to put a biscuit on top of the rice...And pour the beans on top...Try that treat.

Ingredients

1 pound of dry red beans clean and picked and soak in water for 24 hours

1 pound sliced beef smoke sausages

2 smoke turkey tails

1 pound smoke beef sausages sliced

1 large onion chopped

2 garlic clove mashed

1/2 cup celery

1/8 teaspoon cayenne pepper

2 tablespoon Cajun Seasoning

1/4 cup Apple Cider Vinegar

2 tablespoon Hickory Smoked liquid

1 cup long grain rice (cooked)

Procedure:

1. Boil turkey tails in 8 cups of water 1 hour

2. Add Beans

3. Add all ingredients to the cooking beans.(not rice)

4. Cook 1 hour 30 minutes until beans are tender

5.start mashing some of the beans on the side of the pot with a big spoon
to make them creamy.... beans need to cook 30 minute more with the sliced smoke sausages.

6.Take out turkey tails before serving over rice

Leftover Chicken Croquettes



My grandmother And Mother used to make salmon cakes; I adapted that recipe to use leftover cooked chicken."

Leftover Chicken Croquettes

1 1/2 cups seasoned dry bread crumbs

2 eggs, lightly beaten

2 cups sauteed chopped onion

1 tablespoon chopped fresh parsley

1 teaspoon salt

1/2 teaspoon ground black pepper

1/2 each red and green bell peppers

You can add ingredient you like to this dish at this point...

In a large bowl combine the chicken, bread crumbs, 2 eggs and onion and mix well; if mixture is too dry to form patties, mix in another lightly beaten egg.

Mix well and form into small patties.

Heat oil in a large skillet over medium heat and fry patties in oil until golden brown.

Banana Cream Pie




This creamy and cool Banana Cream Pie is a hit every time you need a quick and easy dessert...

Graham cracker crust

Nilla Wafers about 40 cookies

1 pt whipping cream whipped

3 cups whole milk

1 cup white sugar

1⁄3 cup all-purpose flour

1⁄4 teaspoon salt

3 egg yolks, slightly beaten

2 tablespoons butter

1 teaspoon vanilla

6 bananas

Directions

In a saucepan scald the milk.

In another saucepan, combine the sugar, flour and salt; gradually stir in the scalded milk.

Over medium heat, stirring constantly, cook until thickened.

In a small bowl beat eggs yolks slightly, stir a small amount of the hot mixture into beaten yolks when thoroughly combined, stir yolks into hot mixture.

Cook for one minute longer, stirring constantly.

Remove from heat and blend in the butter and vanilla.

Let sit until cool...then add whipping cream and combine together with filling

Add half of the mixture in Graham cracker crust than add the bananas slice and finsh covering the pie add cookies on top and sides.

If desired, make a meringue (you'll have 3 leftover egg whites) to top the pie. let the pie cool until serving.

Elvis Presley Jail House Rock Cake



A cake that is a tribute to Elvis and is easy and delicious.

INGREDIENTS

1 White cake mix

8 oz can
crushed pineapple

1 cup
sugar

8 oz pkg
Cream Cheese

½ cup
butter, softened

3 cup
powdered sugar

1 teaspoon
vanilla

2 - 3 cups roasted
crushed pecans or walnuts

DIRECTIONS
Bake a white cake according to instructions, cool, and poke holes in it.
Boil crushed pineapple with juice and 1 cup of sugar until thicken and cool . Pour over cool cake.

In large bowl mix cream cheese, butter, powdered sugar. Add vanilla and crushed pecans, mix good and spread over evenly cake.
