Buttermilk Egg Pie



A tangy custard is baked in a short crust in this old fashioned dessert... This old-fashioned pie is wonderful to freeze and to have on hand for unexpected guests! Happy Eating...Sandra

Ingredients 

4
eggs

½ cup
butter, softened

1 1/2 cups
white sugar

3 tablespoons
all-purpose flour

1 cup
buttermilk

1 teaspoon
vanilla extract

1 tablespoon
lemon juice

⅛ tablespoonfreshly grated nutmeg

Preheat oven to 350 degrees

Beat eggs until frothy; add butter, sugar and flour. Beat until smooth.
Stir in buttermilk, vanilla, lemon juice and nutmeg; pour into pie shell.
Bake for 40 to 60 minutes, or until center is firm.

Mexican Taco Salad bowl



You can make a larger amount of the beef mixture to refrigerate and use multiple times!

Ingredients

1 lb. extra-lean ground beef

1/2 t mince garlic

1/2 cup chop green bell peppers

1/2 chop red bell peppers

1/2 cup chop onion

2 tablespoon tomato paste

1 tablespoon chile powder

1 tablespoon Cumin

1 tablespoon coriander

Filling

Taco bowl shell

1/2 cup mashed beans, canned

2 Tablespoon sour cream

2 tablespoon Avocado guacamole

1/4 cup shredded cheddar cheese

2 T. salsa

Salad greens

1/2 Season rice

1/2 cup mashed beans, canned

Directions

Brown the beef, then add the first 8 ingredients until tender not over cook..Start with beads,rice,and meat. Top your shell with salad greens and remaining ingredients and enjoy!

Dark Golden Brown Chicken Thighs


My Mom Fried The Best Fried Chicken.. always prepared her chickens the day before and cooked them simply.

Ingredients

1-1/2 cups all-purpose flour

1-1/2 teaspoons salt

1/2 teaspoon pepper

fryer chicken (3 to 4 pounds), cut up or pieces of your choice

Oil for frying

Directions
In a large resealable plastic bag, combine first four ingredients. With paper towels, pat chicken dry; add to bag, a few pieces at a time. Seal bag and shake to coat.
In a large skillet over medium-high heat, heat 1/2 in. of oil; fry chicken until browned on all sides. Reduce heat; cover and cook for 30-35 minutes or until juices run clear, turning occasionally. Uncover and cook 5 minutes longer. Drain on paper towels.

Vegetable Egg Foo Yung


In Chinese cuisine, it is known as fu yung hai, sometimes spelled as pu yung hai. The omelette is usually made from the mixture of vegetables such as carrots, bean sprouts, and cabbages, mixed with meats such as crab meat, shrimp, or minced chicken. Happy Eating..Sandra

4 eggs

About 8 ounces fresh vegetables

1/3 cup thinly sliced green onions

1 cup cooked meats or fish

1/4 teaspoon garlic

4 tablespoons vegetable oil for frying

Sesame seed oil just a drizz

For sauce
1 cups chicken broth
2 tablespoons cornstarch
2 tablespoons soy sauce
1 teaspoon fish sauce

Beat together the eggs,with fresh vegtable, green onions,meats or fish, and garlic in a bowl until well-combined. Heat the oil in a skillet over medium heat, and scoop about 1/2 cup of the egg mixture into the skillet to make a patty.

Fry until golden brown, about 4 minutes per side, and repeat with the remaining egg mixture. Set the patties aside.

Whisk together the chicken broth, cornstarch, and soy sauce in a saucepan over medium-low heat until the sauce simmers and thickens, about 5 minutes. Spoon the sauce over the patties.

Fondant potatoes



Garlic Thyme Fondant Potatoes a kounty delight yet elegant side dish that is delicious and different. taste never goes out of style Perfect for Dinner Parties or Feasts Days.

I'll call them scallop potatoes because they look like little scallop when they are browning.

Place them on a plate and see all the happy faces...Happy Eating Sandra

Preheat oven to 425 degrees F (220 degrees C).
Cut off ends of russet potatoes, stand potatoes on end, and peel potatoes from top to bottom with a sharp knife to make each potato into a uniform cylinder. Cut each cylinder in half crosswise to make 6 potato cylinders about 2 inches long.

Place potatoes into a bowl of cold water for about 5 minutes to remove starch from outsides; pat dry with paper towels.

Place a heavy oven-proof skillet (such as a cast iron skillet) over high heat. Pour in vegetable oil; heat oil until it shimmers slightly.

Place potato cylinders with best-looking ends into the hot oil, lower heat to medium-high, and pan-fry potatoes until well-browned, 5 to 6 minutes. Season with salt and black pepper.

Flip the potatoes onto the opposite ends. As they cook, use a paper towel held with tongs to carefully blot out the oil from the skillet. Add butter and thyme sprigs to skillet.

Pick up a thyme sprig with tongs and use it to paint butter over the top of the potatoes. Cook until butter foams and foam turns from white to a pale tan color. Season with more salt and pepper. Pour chicken stock into skillet.

Transfer skillet to preheated oven and cook until potatoes are tender

Place potatoes on a serving platter and spoon thyme-scented butter remaining in skillet over potatoes. Garnish with thyme sprigs. Let cool about 5 minutes before serving.

Cheese Burgers With Sauteed Onions

1 pound ground

1 teaspoon liquid smoking flavoring

1 large onion thinly slice

2 teaspoon worcestershire sauce

Salt and pepper to taste

Toasted Buns

Cheese Your Choice

2. In a medium bowl, lightly mix together the ground beef with black pepper and salt, worcestershire sauce, liquid smoke.

Form into 3 patties.Over handling will make meat tough.cook very low heat nice and slow to juicy to create juicy burger...I sometimes cook these burgers in an Iron skillet.

Saute sliced onions with 2 table oil and 1 tablespoon liquid smoking flavoring place in skillet until soft and done.
