Ox Tails


Always felt if you can make a meatloaf... you can perpare a plate of Ox Tails over rice... Really! getting a recipes from your mother or grandmother is good - But it's a show you how or tell you kinda thang right?
well, you got the recipe for the dish, but you yet lost in space when you get it ... when you hang up the phone you are yet lost. Well, here is my recipe. Step By Step.


These Ox Tails are looking at you and ready to be cooked and gravy and serve over rice. wash them up and dry them off and add black pepper and salt and place in the refrigerator. about 4 hours or over night






Remove for the refrigerator and dust with flour all over making sure they are cover well-. this is important.



Next adding about 1/2 cup canola oil in a frying pan on med heat and adding the Ox Tails. Brown Ox Tails on each side very well. Take them out and placing them on paper towels making sure no oil is on them. adding to a baking dish.




Adding salt and pepper to your taste-. 1 cup chopped onion, 2 cloves garlic chopped ,1 cup chopped celery, 1 cup chopped carrots, 1 cup chopped raw potatoes, 1 bay leaf ,1 bunch fresh thyme chopped and 6 cups low-sodium beef broth. Cover and place in oven for 1 hour on 350.




After cooking for an hour pour off the broth-. you don't need it. Adding another cup onions and 2 cloves garlic chopped-. adding brown gravy mix on top of cooked Ox Tails-. I like Tone's you can used what you like. follow directions and make 6 cups. pour all over Ox tails and cover and place in oven and cook for 1 hour more


Cook your rice....I like pot boil rice!

Grandma's Old Fashion Tea Cakes



Original recipe makes 2 dozen Change Servings

    1 cup butter

    1 cups white sugar

    2 eggs

    3 cups all-purpose flour

    1/2 teaspoon baking soda

    1/2 teaspoon salt

    1/2 teaspoon ground nutmeg

    1 teaspoon vanilla extract

Directions

  1. In a medium bowl, cream together the butter and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking soda, salt and nutmeg; stir into the creamed mixture. Knead dough for a few turnns on a floured board until smooth. Cover and refrigerate until firm.
  2. Preheat the oven to 325 degrees F (165 degrees C). On a lightly floured surface, roll the dough out to 1/4 inch in thickness. Cut into desired shapes with cookie cutters. Place cookies 1 1/2 inches apart onto cookie sheets.
  3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely and place in a big jar.

Coconut Pecan Cake

Great after church cake on a hot day...just because it kept in the ice box because the icing is make up with cool whip and sour cream.

1 box Duncan Hines Classic Yellow Cake Mix for a highest cake uses two boxes
or uses a yellow cake recipes of your choice. Bake cakes and let cool.

Icing

1 16 oz tub cool whip
1 8 oz sour cream
1 cup sugar ( extra fine)
1/2 cup chop pecan
2 teaspoon coconut flavor
mix cool whip and sour cream  together adding sugar and pecan. next add coconut flavor.blend well until smooth. when icing the cake place a lot on that bottom layer and than icing the top layer. keep cold

My Red Beans With Sliced Sausages

I love Beans of all kinds and I will cook them up in a tinkle of an eye. One thing you much know you got to cook beans in smoke meat so they can get that flavor.It don't have to be pork you can cook them in smoke turkey tails,"yes sir"

1 pound of dry red beans clean and picked
2 smoke turkey tails
1 pound smoke sausages sliced
1 large onion chopped
2 garlic clove mashed
1/2 cup celery
1/8 teaspoon cayanna pepper
salt to taste
1/4 teaspoon cumin
1 cup Uncle Ben’s long grain rice (cooked)



Procedure:

1. Boil turkey tails in 8 cups of water 1 hour

2. Add Beans and cook 1 hour

3. Add all ingredients to the cooking beans.(not rice)

4. Cook 30 minutes

5.start mashing some of the beans on the side of the pot with a big spoon
to make them creamy.... beans need to cook 30 minute more with the sliced smoke sausages.

6.Take out turkey tails before serving over rice

My Sister Marilyn's Monkey Bread

My sister Marilyn always coming up with something fun to eat. - we always seating around the kitchen table doing nothing but talking and laughing and up pop something good to eat and fun - her old fashion monkey bread good and hot and sticky. with a good cup of her coffee or a good tall glass of ice tea we have a good ole time.




Original recipe makes 1 10 inch tube pan

    3 (12 ounce) packages refrigerated biscuit dough get the cheap ones

    1 cup white sugar

    2 teaspoons ground cinnamon

    1/2 cup sweet butter

    1 cup packed  dark brown sugar

    1/2 cup chopped walnuts or pecans

    1/2 cup raisins or a lot if you like raisins

Directions

Preheat oven to 350  Grease one 9 or 10 inch tube
Mix white sugar and cinnamon in a brown paper bag. Cut biscuits into quarters. Shake biscuit pieces in the sugar cinnamon mix. Arrange pieces in the bottom of the prepared pan. Continue until all biscuits are coated and placed in pan. If using nuts and raisins, arrange them in and among the biscuit pieces as you go along.
In a small saucepan, melt the butter with the brown sugar over medium heat. cook for 1 minute. Pour over the biscuits.
Bake at 350 for 35 minutes. then turn out onto a plate. adding icing topping Do not cut! The bread just pulls apart.

Icing topping
1 cup powder sugar
2 tablespoon butter
1 tablespoon milk
1 table of vanilla

blend together until thin to pour over hot monkey adding more chopping nuts if you like... for those little monkeys.

Roasted Chicken Leg Quarter

    Roasted Chicken Leg Quarter

 

6 Med sized chicken legs quarters clean and trim of fat

1 tablespoon salt

1 tablespoon black pepper

1 tablespoon cayenne pepper

3 tablespoon garlic powder

3 tablespoon dry sweet basil

1 tablespoon dry rosemary

1 tablespoon  dry thyme

smoked paprika enough to sparkle and cover well six leg quarters


Dry leg quarter and place in baking dish.

Sparkle black pepper first evenly over legs

Next sparkle salt following the trails of black pepper.

Next sparkle the garlic powder all over and the basil and rosemary will be next

Adding more sparkle garlic and basil on the backside chicken leg so you can get more flavor

Sparkle cayenne pepper. you can do the spice heavy if you like and coat the leg quarter to your liking.

Cover and refrigerate over night. flavor of the spices go though the chicken.

Next sparkle smoked paprika all over leg quarter

Keep cover and place in per heated oven 400 degree for 1 1/2 hour pour juices in a bowl and pour over chicken and leave uncover bake for 15 mins or until golden brown.

Sweet Potato Souffle

Sweet Potatoes and Roasted pecan topping. what can you ask for next in a soulffle? never will fall and never will fell at your dinner table, easy and never hard to perpare this classic dish is a treasure. You know sweet potatoes is a vegetable your kids will have no problem eating this dish up!

3 cups sweet potatoes cooked and mashed
1 cup of sugar
2 eggs, well beaten
2 tablespoon vanilla
1/2 cup of evaporated milk
1/2 real sweet butter
1/2 teaspoon nutmeg 

Mix potatoes and the ingredients together until will blended...no lumps
pour in a baking dish.

Topping:
1 cup light brown sugar
1/2 cup flour
1 cup pecans chopped
1/3 butter

Mix well. ingredients will be stiff and crumbly. crumble on top of potatoes mixture bake at 350 for 30  mins

Strawberry Watermelon Salad


1/2 c sugar
1 c water
1/4 watermelon, cut into cubes
3 c strawberries, halved
1/2 pint fresh blueberries
1/2 lemon, squeezed for juice


To make the simple syrup, bring sugar and water to a boil in a small saucepan, let simmer for about 5 minutes and cool.
Place watermelon, strawberries and blueberries in a large bowl and add the syrup, mixing well. adding  lemon juice refigerate until very cold place on cold dishing you can add sliced Bananas if you like.

Ms Sweet Basil

 Sweet Basil, is a common name for the culinary herb Ocimum basilicum.


Types of Basil

There are many varieties of these plants.

Thai Basil grow up to 24 inches in height and are 2 feet wide.

Genovese Basil  principally used in Italian cuisine.

Holy Basil  People of Hindu religion use these leaves for worship.

Lemon Basil  with a citric aroma.

Cinnamon Basil  referred to as the Mexican Spice Basil.

African blue Basil strong camphor-like smell.

Medicinal Use using Basil ( Did You Knew???).

    It is used as an expectorant for the treatments of diseases like asthma, flu, cold and bronchitis.

    The leaves are also good for keeping diabetes under control.

    Leaf extract is used to reduce throat pain and high body-temperature.

    The extract is also used as an anti-venom for snake bites.

    It is used along with honey for the treatment of cataract.

    Holy Basil leaves are used in Ayurvedic medicines.

    The leaves  are used to prepare “Basil Tea” which helps to prevent diseases like Dengue and Malaria.

    The tea also treats several health disorders including constipation, diarrhea and indignation.

    The essential oil is used in the treatments of migraines, headaches and allergies.

    Massaging with this essential oil extraction reduces arthritis.


Growing Basil

The basil plants can be easily cultivated from seeds which take less than two weeks to get roots. like me you can easy buy small plants and grow it in the garden or indoors. I like growing them in kitchen windows.

               " Once the flowers bloom, the leaves of the plant turn bitter and lose their flavor."

The Basil plants need  leaves need picking once every 3-4 weeks to grow properly. you can eat them in a salad or make fresh basil bread with the picking of the leaves.

 Or Something simple and Easy

 3 cups fresh basil leaves

    1/2 cup olive oil

    2 cloves garlic, peeled

    1/4 cup toasted pine nuts

    1/4 cup grated Parmesan cheese

    1 (1 pound) loaf Italian bread

    3  tomatoes, thinly sliced

    1 (8 ounce) package mozzarella cheese, sliced


Directions

    In a blender, puree the basil leaves, olive oil and garlic. Mix in the pine nuts and Parmesan cheese. Continue processing until all is blended well .

    Preheat the toaster oven. Slice Italian bread to you likeness in thickness. Spread a layer of pesto on each slice. Top with  tomatoes and mozzarella cheese.
    Place topped bread slices in a single layer on a large baking sheet. toast about 5 minutes, or until cheese is melted

How To Can Peaches

I love peaches! the fresh fruity favor and that juicy bite.love the fresh smell of them when you pass them in a store or on a tree. but I hate buying them because they go bad in a short while...So what I did??? I just start canning them and saving them for that peach cobbler or just eating them out of the jar, so now I can buy many as I want and get all that enjoyment in a jar and eat them for a peachy day when ever I want.
    Wash them very well....
Blanch peaches in boiling hot water just long enough to peal the skin off easily. This stops the enzymes from degrading the flavor during storage
Quarter peaches and throw away the seed.

Pack each hot jar with quartered peaches, leaving a 1/2 inch of space at the top of the jar. Pack tightly.

Fill each jar with the remaining liquid from the blanching pot.

Add 1-2 tablespoons of sugar on top of the liquid. The sugar will dissolve, spread throughout the jar, and seep into the peaches during processing.

Wipe off all spills and sugar from jar, especially the lid area. Place lids on jar and secure tightly.

Place jars in a canner, leaving 1-2 inches of water above the jars.

Calculate the canning time. Canning time varies according to the type of canner you have and the altitude of your location. Be sure to check your canner's instructions.

    If you are using a boiling water canner, these guidelines should help. For 0-1000 feet above sea level, cook for 10 minutes. For 1001-3000 feet, cook for 15 minutes. For 3001-6000 feet, cook for 20 minutes. If you are above 6000 feet, cook for 25 minutes.


  • If you are using a dial gauge pressure canner or a weighted gauge pressure canner, you will need about 8 minutes. Clarify with the instruction manual of your canner

    smoke turkey And Dry Butter Beans

     
    2 or 3 smoked turkey tail
    2 onions chopped
    1 clove garlic, crushed 
    3 stalk celery, chopped 
    1/2 teaspoon black pepper
    1 large Bag Dry Beans 
    1/2 teaspoon salt
    1/2 stick Butter
     
    place smoked turkey tail
     in a stockpot with enough water to 
    cover; add 1 onions and garlic.Simmer 1 hour 
    until smoked turkey tail
     is tender.
    Soak dry beans about two hours pouring 
    hot boiling water on them and let cool
    down to room temp.remove the water 
    from the beans and place in the smoked turkey tail
    pot.
    Adding two cups hot water and cook 1 hour on 
    med heat,then adding celery,1 onion
    ,salt, pepper and butter
    cook 30 minute on low until beans or tender
    remove the ham hocks or chop up and serve
