Buttermilk Egg Pie



A tangy custard is baked in a short crust in this old fashioned dessert... This old-fashioned pie is wonderful to freeze and to have on hand for unexpected guests! Happy Eating...Sandra

Ingredients 

4
eggs

½ cup
butter, softened

1 1/2 cups
white sugar

3 tablespoons
all-purpose flour

1 cup
buttermilk

1 teaspoon
vanilla extract

1 tablespoon
lemon juice

⅛ tablespoonfreshly grated nutmeg

Preheat oven to 350 degrees

Beat eggs until frothy; add butter, sugar and flour. Beat until smooth.
Stir in buttermilk, vanilla, lemon juice and nutmeg; pour into pie shell.
Bake for 40 to 60 minutes, or until center is firm.

Mexican Taco Salad bowl



You can make a larger amount of the beef mixture to refrigerate and use multiple times!

Ingredients

1 lb. extra-lean ground beef

1/2 t mince garlic

1/2 cup chop green bell peppers

1/2 chop red bell peppers

1/2 cup chop onion

2 tablespoon tomato paste

1 tablespoon chile powder

1 tablespoon Cumin

1 tablespoon coriander

Filling

Taco bowl shell

1/2 cup mashed beans, canned

2 Tablespoon sour cream

2 tablespoon Avocado guacamole

1/4 cup shredded cheddar cheese

2 T. salsa

Salad greens

1/2 Season rice

1/2 cup mashed beans, canned

Directions

Brown the beef, then add the first 8 ingredients until tender not over cook..Start with beads,rice,and meat. Top your shell with salad greens and remaining ingredients and enjoy!

Dark Golden Brown Chicken Thighs


My Mom Fried The Best Fried Chicken.. always prepared her chickens the day before and cooked them simply.

Ingredients

1-1/2 cups all-purpose flour

1-1/2 teaspoons salt

1/2 teaspoon pepper

fryer chicken (3 to 4 pounds), cut up or pieces of your choice

Oil for frying

Directions
In a large resealable plastic bag, combine first four ingredients. With paper towels, pat chicken dry; add to bag, a few pieces at a time. Seal bag and shake to coat.
In a large skillet over medium-high heat, heat 1/2 in. of oil; fry chicken until browned on all sides. Reduce heat; cover and cook for 30-35 minutes or until juices run clear, turning occasionally. Uncover and cook 5 minutes longer. Drain on paper towels.

Vegetable Egg Foo Yung


In Chinese cuisine, it is known as fu yung hai, sometimes spelled as pu yung hai. The omelette is usually made from the mixture of vegetables such as carrots, bean sprouts, and cabbages, mixed with meats such as crab meat, shrimp, or minced chicken. Happy Eating..Sandra

4 eggs

About 8 ounces fresh vegetables

1/3 cup thinly sliced green onions

1 cup cooked meats or fish

1/4 teaspoon garlic

4 tablespoons vegetable oil for frying

Sesame seed oil just a drizz

For sauce
1 cups chicken broth
2 tablespoons cornstarch
2 tablespoons soy sauce
1 teaspoon fish sauce

Beat together the eggs,with fresh vegtable, green onions,meats or fish, and garlic in a bowl until well-combined. Heat the oil in a skillet over medium heat, and scoop about 1/2 cup of the egg mixture into the skillet to make a patty.

Fry until golden brown, about 4 minutes per side, and repeat with the remaining egg mixture. Set the patties aside.

Whisk together the chicken broth, cornstarch, and soy sauce in a saucepan over medium-low heat until the sauce simmers and thickens, about 5 minutes. Spoon the sauce over the patties.

Fondant potatoes



Garlic Thyme Fondant Potatoes a kounty delight yet elegant side dish that is delicious and different. taste never goes out of style Perfect for Dinner Parties or Feasts Days.

I'll call them scallop potatoes because they look like little scallop when they are browning.

Place them on a plate and see all the happy faces...Happy Eating Sandra

Preheat oven to 425 degrees F (220 degrees C).
Cut off ends of russet potatoes, stand potatoes on end, and peel potatoes from top to bottom with a sharp knife to make each potato into a uniform cylinder. Cut each cylinder in half crosswise to make 6 potato cylinders about 2 inches long.

Place potatoes into a bowl of cold water for about 5 minutes to remove starch from outsides; pat dry with paper towels.

Place a heavy oven-proof skillet (such as a cast iron skillet) over high heat. Pour in vegetable oil; heat oil until it shimmers slightly.

Place potato cylinders with best-looking ends into the hot oil, lower heat to medium-high, and pan-fry potatoes until well-browned, 5 to 6 minutes. Season with salt and black pepper.

Flip the potatoes onto the opposite ends. As they cook, use a paper towel held with tongs to carefully blot out the oil from the skillet. Add butter and thyme sprigs to skillet.

Pick up a thyme sprig with tongs and use it to paint butter over the top of the potatoes. Cook until butter foams and foam turns from white to a pale tan color. Season with more salt and pepper. Pour chicken stock into skillet.

Transfer skillet to preheated oven and cook until potatoes are tender

Place potatoes on a serving platter and spoon thyme-scented butter remaining in skillet over potatoes. Garnish with thyme sprigs. Let cool about 5 minutes before serving.

Cheese Burgers With Sauteed Onions

1 pound ground

1 teaspoon liquid smoking flavoring

1 large onion thinly slice

2 teaspoon worcestershire sauce

Salt and pepper to taste

2. In a medium bowl, lightly mix together the ground beef with black pepper and salt, worcestershire sauce, liquid smoke.

Form into 3 patties.Over handling will make meat tough.cook very low heat nice and slow to juicy to create juicy burger...I sometimes cook these burgers in an Iron skillet.

Saute sliced onions with 2 table oil and 1 tablespoon liquid smoking flavoring place in skillet until soft and done.

Homemade Chicken And Waffles Made With West Bend Waffles Maker


I've used this same waffle recipe for many years and it always gets great reviews. You can top them with all your favorite things: sauteed apples, blueberries, strawberries, raspberries, whipped cream, bananas, pecans, let your imagination run wild here! Happy Eating Sandra


2 cups flour

4 tsp baking powder

1 tsp salt

2 eggs

1 1/2 cups buttermilk

1/4 cup cooking oil

1 teaspoon sugar

1 Teaspoon Vanilla extract

Heat waffle iron to med-high. In the meantime, in a mixing bowl, combine the flour, baking powder and salt. Set aside. In a separate bowl, combine the 2 eggs  and milk and whisk into the flour mixture. Stir to combine. 

How to make fluffy waffles

In a clean separate bowl, beat 2 egg whites until stiff peaks form, and then fold gently into waffle batter. Pour 1 1/2 soup ladles of batter onto hot waffle iron and bake for 3 - 5 minutes or until desired crispiness is achieved.
Yield: 4 round waffles

Hummingbird Snack Cakes



Cooks in 1978 baked this cake when they had over ripened bananas,it was the perfect way to use the bananas.When you eat a piece of hummingbird cake, you would hum like a hummingbird because it is so good.

This cake is a southern delight that gives you the essence of the tropics with it's bananas and crushed pineapple. Restaurants from the east coast to the west coast have made this delightful cake for it's southern customers.

Mrs. Wiggins' recipe [1978]

"Hummingbird cake"

3 cups all-purpose flour

2 cups sugar

1 teaspoon salt

1 teaspoon soda

1 teaspoon ground cinnamon

3 eggs, beaten

1 1/2 cups oil or 1 cup oil for your choosing just for texture

1 1/2 teaspoons vanilla extract

1 (8 ounce) can crushed pineapple, undrained

2 cups chopped pecans or walnuts, divided

2 cups chopped bananas

Combine dry ingredients in a large mixing bowl; add eggs and salad oil, stirring until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, 1 cup chopped pecans, and bananas. Spoon batter into 3 well-greased and floured 9-inch cake pans. Bake at 350 degrees F. For 25 to 30 minutes; remove from pans, and cool immediately. Spread frosting between layers and on top and sides of cake. Sprinkle with 1 cup chopped pecans. Yield: one 9-inch layer cake.
Cream Cheese Frosting
2 (8-ounce) packages cream cheese, softened
1 cup butter or margarine, softened
2 (16 ounce) packages powdered sugar
2 teaspoons vanilla extract
Combine cream cheese and butter; cream until smooth.Add powdered sugar, beating until light and fluffy. Stir in vanilla.

Chinese vegetable chow mein




This simple and tasty Chinese vegetable chow mein is a classic that you can easily make in the comfort of your own kitchen

The best part is that it only takes less than 15 mins to make, so you can have a delicious meal on the dinner table in less than half an hour.

Mix with vegetables carrot, red pepper, cabbage and mushrooms, this dish is what you want to put in and served with Spaghett for an Oriental feel.

This Chinese vegetable chow mein is also a great way to get everyone in the family eating more vegetables.

This dish is suitable for vegetarians and for those who are trying to reduce their meat intake.

Ingredient:

2 1/2 cups Raw Cabbage

1 stick of celery in Scripp

4 Tbsp peanut oil or vegetable oil

1 small packet oyster mushrooms, sliced

1 red bell pepper, seedless and sliced

1 green bell pepper,seedless

2 cup  tenderstem broccoli, cut into pieces

1 carrot, peeled and Scripp

2 tbsp soy sauce

1tbsp rice vinegar

1-2 tbsp fish sauce

4 cups Spaghett

If you want to add some meat to this dish, I recommend what every you like

Method
Heat the oil in a wok or large frying pan. Add the veg and cook for 2-3 mins. Pour in the soy sauce, vinegar and fish sauce. Add the noodles to the pan and heat through.

Yellow Squash Corn Bread Dressing


Cornbread dressing combined with cooked squash for a wonderful side to your chicken or turkey Feast Days.

This squash dressing taste like chicken and dressing..Lets Not Get Them Confused...Smile

I love serving unique and different meals dishes to my family and friends..When They come to my home they know to find a great googly moogly...a Surprise dish I come up with..Happy Eating Sandra

Ingredient

2 cups yellow squash (sliced thin or cubed)

2 cups cornbread (diced)

1 (10 ounce) can cream of chicken soup

1 onion (diced)

salt and pepper to taste

1/2teaspoon rubbed sage

3 tablespoon butter

1/2cup green onion (sliced thin)

1 tablespoon garlic clove (minced)

PreHeat Oven to 375 degrees.

Place your diced or sliced yellow squash in a pot with the onions, green onions, garlic and just cover them with water.

Bring to a boil in a pot sliced yellow squash and turn down a bit and cook til the yellow squach is nearly done and has softened.not over cooked...

Carefully pour the water off

Add butter and spices.

Mix in the cornbread, spices, cream chicken soup, with the squash/veggie mixture, and pour into a glass casserole dish.

Place in oven for 45 mins uncovered until golden brown.

Cake Doughnuts


There's nothing better than homemade doughnuts! I like cake donuts better than yeast donuts. This is how I make my favorite doughnuts for my family.

Real simple ingredients you already have in your kitchen. You can make the dough the night before and have them ready to go in the morning.

1/2 cup white sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/4 teaspoon ground nutmeg
1 cut butter milk

1 egg, beaten

1/4 cup butter, melted and cooled

2 teaspoons vanilla extract

2 quarts oil for deep frying

1/2 teaspoon ground cinnamon

1/2 cup white sugar

In a large bowl, stir together the flour, 1/2 cup sugar, baking powder, salt, 1 teaspoon of cinnamon and nutmeg. Make a well in the center and pour in the milk, egg, butter, and vanilla. Mix until well blended. Cover and refrigerate for 1 hour.

Heat oil in a deep heavy skillet or deep-fryer to 370 degrees F (185 degrees C). On a floured board, roll chilled dough out to 1/2 inch thickness. Use a 3 inch round cutter to cut out doughnuts. Use a smaller cutter to cut holes from center. If you do not have a small cutter, use the mouth of a bottle.

Fry doughnuts in hot oil until golden brown, turning once. Remove from oil to drain on paper plates. Combine the remaining 1/2 teaspoon cinnamon and 1/2 cup sugar in a large resealable bag. Place a few warm donuts into the bag at a time, seal and shake to coat.

Sweet And Sour Chicken


Sweet and sour chicken is delicious. Easy sweet and sour chicken recipe that calls for chicken, sweet and sour sauce that is better than takeout.

I did not add pineapple but you can to the sauce...(The Reason I Did Not Add Them I Did Have Them Available).

The secret is in the chicken marinade, specifically using eggs and cornstarch and not flour, which cornstarch creates a super-light coating all around the chicken makiing it not dory but soft and tender.

Recipe

1 pound boneless skinless chicken breasts cut into bite sized pieces

Salt and black pepper lightly

1/2 cup cornstarch [not flour]

2 well beaten eggs

1/2 cup Peanut oil to fry

For the sauce:

1 tablespoon oil

1/2 tablespoon minced garlic

1 tablespoon minced onion

1/2 each diced green and red bell pepper

1/4 cup cider vinegar

2 tablespoon soy sauce

1/8 teaspoon sesame oil

1/2 cup ketchup

1/2 cup sugar

Pineapple Chucks

Garnish:
Chopped scallions
Sesame seeds

Season chicken with salt and pepper. Coat them with cornstarch, dip in beaten egg and fry until golden, crispy and cooked done through. place aside on paper towel.

In a large pan, heat oil and fry garlic and onion until fragrant.

Add the bell peppers, cider vinegar, soy sauce, ketchup and sugar. Bring to a boil.

When the sauce get thick add the chicken. Toss to coat.Garnish with chopped scallions and sesame seeds.

Place in a to go box and serve with white steam rice.

Buttermilk Cornbread


This is a simple, classic buttermilk cornbread recipe baked in a preheated cast iron skillet or a cake pan. There's no sugar in a Southern-style cornbread, but a small amount of sugar or a little honey can be added if you like.

This cornbread recipe is more on the moist and tender side not dry or crumbly that many traditional recipes  produce. This is a very easy cornbread recipe that always gets happy reviews.

I usually use melted butter in my cornbread, but melted shortening or cooking oil...

Buttermilk Corn bread is great, especially to a vegetarian diet, where its full flavor and slightly crunchy texture are welcome at any meal.

Don't ever say I can't made Cornbread...Now You can with this recipe dish deliver so much for so little work.

1 cup Self rising cornmeal

1 cup Self rising flour

1/4 teaspoons baking powder

1 cup buttermilk

1 large egg

3 tablespoon mayonnaise

1/4 cooking oil

Directions

Preheat oven to 400°F.

Heat oil in an 8" cast iron skillet or cake pans for 5 minutes.Combine cornmeal and flour and baking powder medium bowl.

Stir together buttermilk and egg stirring just until moistened and creamy(watch video)
add mayonnaise until well blended and than add oil and make sure it well blended as well..
Pour into the hot skillet or cake pan.

Cook About 20 mins or until golden brown.
