Catfish Fillets With Baked Toasted Almonds

2 lbs Catfish Fillets

1/2 cup whole Almonds, toasted

3 Tablespoon Cornmeal And 3 Tablespoon Flour mix together

2 Tbsp grated Parmesan Cheese

2 Tbsp fresh Parsley, chopped

2 Tbsp fresh Lemon Juice

Salt, to taste

ground Black Pepper, to taste

Grind the almonds and combine with the cornmeal and flour, parmesan cheese,salt and pepper. Sprinkle the lemon juice over the catfish and coat the fillets thoroughly with the almond mixture.

Place the fillets on a baking sheet with spreaded olive oil and bake at 400F for 8 minutes, or until cooked through.

8 OZ sliced almonds
Olive oil

Place almonds in nonstick pan and saute for 7 min in olive oil or until almond became slightly golden.

Serve Catfish hot topped with golden almonds.

Serve immediately
